STEAMED SAN-YU
STEAMED SAN-YUINGREDIENTS:
1 San-yu
1 slice dried tangerine peel
2 slices ginger
4 stalk spring onion
SEASONING FOR FISH :
pinch of pepper
1 tsp cornflour
1 tsp wine
METHOD:
1 .Scale and clean fish . blanch in boiled water. then chill in cold water. drain and wipe dry .apply
seasoning all over fish. place on dish.
2 .soak , clean and shred tangerine peel. sprinkle fish . boil water ,steam fish for 10 minutes over high heat.
3 .thinly shred ginger .section and shred spring onion.
4 .discard water in dish . saute ginger and spring onion with 2 tbsp oil. pour over fish . add light soy to
season .serve hot....
