STEWED LAMB BRISKET
STEWED LAMB BRISKETINGRDIENTS:
1 1/3 Ib lamb brisket
3/4 ib spare ribs {belly part}
2 star aniseed
1 cardamom
2 slices ginger
2 stalks spring onion
SEASONING:
1/2 tbsp wine
1 tsp sugar
2 tbsp light soy
1 tbsp dark soy
4 cups water
METHOD:
1 .Wash .chop up and blanch lamb brisket in boiled water. cook for 5 minutes.remove and wash .drain
well..wash and blanch spare ribs in boiled water .cook for 5 minutes .remove and wash with cold water
section spring onion
2 ..saute ginger , lamb brisket and spare ribs with 3 tbsp oil. fry over high heat for 5 minutes .
add star aniseed ,cardamom and seasoning .bring to boil .then stew lamb brisket over medium
heat till tender .stir in 1 tsp cornflour and 2 tbsp water..sprinkle with sectioned spring onion.
then bake for 5 minutes ,serve hot....
