EGGPLANT MINCED PORK AND MUNGBEAN VERMICELLI POTINGREDIENTS:
4 oz minced pork
10 .oz eggplant
3 .oz mungbean vermicelli
1 .clove mashed garlic
1 .shallot {mashed}
1 green pepper {diced}
1 .red chilli {diced}
1 .tbsp yellow bean paste
1 .tsp shaoxing wine
SESONING:
1/2 tsp light soy
1/2 tsp cornflour
1/2 tsp oil
SAUCE:
1 .tsp salt 1/2 tsp sugar
1 1/2 measuring cup watter dash of pepper dash of sesame oil
MHETOD:
1.mix minced pork and seosoning together. thichkly slice eggplant .soak mungbean vermicelli till soft .dish up
2 .saute eggplant in cooked oil ,dish up .heat 1/2 tbsp oil in pot .then add mungbean vermicelli.
3 . saute minced pork ,mashed garlic,shallot,green papper and red chilli with 1/2 tsp oil. add yellow bean paste and sause .bring to boil .put in eggplant .cover and stew oven medium heat with till eggplant is tender.
